How to Cook Flavorful Spicy and Sour Fish Ball Hotpot
First, wash the fish fillet thoroughly, briefly blanch it in boiling water, then drain. If using frozen fish balls, thaw them and drain well before cooking. Wash the beef and marinate it with seasoning for about 15–20 minutes so it absorbs the flavors evenly.
Wash all hotpot vegetables thoroughly and drain them. Cut the cu neo, okra, carrots, and other vegetables into bite-sized pieces. Peel the pineapple, remove the eyes, and cut it into pieces. Cut the tomatoes into wedges.
Next, add water to a pot, then add the basa fish and fish balls and bring to a boil. Season to taste, then add tamarind to create a refreshing sour flavor. Gently mash the tamarind and remove the seeds. Continue adding tomatoes and pineapple, then cook for about 10 minutes to enhance the broth’s flavor.
Finally, add rice paddy herb, sawtooth coriander, and chili. Adjust the seasoning to taste, then turn off the heat. Transfer the broth to a hotpot pot. When serving, dip in additional fish, beef, vegetables, and other toppings. Enjoy with fresh rice noodles and dipping sauce for extra flavor.
